Blackeye Beans (or blackeyed peas) are a small, white, kidney-shaped bean with a single black spot giving it its characteristic name. It has a thinner skin than most other beans, meaning that it cooks quickly without any extra soaking. These creamy beans got their name from their characteristic appearance. They swell when they are cooked, symbolising wealth and prosperity, which is why in some cultures they are a popular good luck food for the New Year!
